Roasted Spring Radish
Bring the season’s bright pinks & pale greens to your plate with these multi-colored radishes!

1 lb multi-colored spring radish
2-4 tbsp vegetable oil
2 oz butter
Salt

Preheat oven to 375°F.
Heat up a cast-iron skillet on the stove at med-high temp.
Chop off the tops & bottoms of each radish, and cut into bite-sized cubes.
Add just enough vegetable oil to cover the base of the pan. Add the radishes to the pan.
Allow the radishes to sear well on one side, undisturbed.
Toss and turn the radishes, then transfer the pan to the oven.
Bake for 5-10 minutes.
Remove from the oven and add butter & salt.
Toss and serve.
